I think I was
incorrect about that.
Just choosing "Embed or subset" in the dropdown menu
does embed the fonts
as they are listed by default in the "Fonts to embed" and "Fonts to subset" boxes.
So what do the "Embed all" and "Subset all" buttons do?
Clicking the "Embed all" button will move
all fonts able to be embedded to the "Fonts to embed" box, and inversely, clicking the "Subset all" button will move
all fonts able to be subsetted to the "Fonts to subset" box.
I think the "able to be" in the preceding paragraph is important. In my limited testing, it appears that not all fonts can be embedded; I noticed that after clicking "Embed all", some fonts remain nonetheless in the "Fonts to subset" box. However, again in my limited testing, all fonts do appear to be subsettable; clicking "subset all" has, for me and to date, always moved all fonts to the "Fonts to subset" box. But perhaps I just haven't stumbled upon a non-subsettable font yet.(?)
