I want Document Setup > Sections > Name > "foo" to appear as a variable in a master page. I can do this with page number ="#". How do I specify the name variable?

I gave up (for now) and am using separate Master pages for each chapter/section heading.
In future, I will probably write a script to apply the headings programmatically.
